Breakfast inspo

Breakfast… traditionally my least favourite meal of the day (yes, even though I know it’s the most important) but over the past 6 months I’ve tried to eat breakfast at home instead of at my desk. Sick of toast, crumpets and porridge I decided the only way I could try to get ‘into’ breakfast was by making it more exciting so I’ve pulled together a few simple breakfast ideas – although not ground breaking they’re simple, quick to prepare and most importantly healthy.

Healthy Breakfast Basics

Avocado: I’m not even going to try to pretend the avocado on toast craze hasn’t happened; it’s so easy to mash onto toast so it features a few times; plus it’s good for you, in the right quantities. I use Tesco Hass Avocados to ripen at home, they’re slightly smaller so good for breakfast and last for longer.

Feta: My new favourite breakfast ingredient – a quick win, easy to crumble over various ingredients and even more so with Tesco Feta Cubes.

Olive oil: Most of these ideas don’t need butter so I top them with a little drizzle of Filippo Berio Extra Virgin Olive Oil

This took me back to beautiful breakfasts in San Sebastián… oven cook the halved cherry tomatoes for 15-20 minutes drizzled in extra virgin olive oil, and seasoned with oregano and salt. For speed I didn’t sieve mine, I broke them up with a fork in the dish and servedon sourdough with fresh basil and another drizzle of olive oil. Season to taste.

Wake up and smell the coffee…☕

Breakfast isn’t complete without coffee and for me nothing beats the smell of fresh coffee… my dad used to start every weekend with a pot of filtered coffee and the smell used to draw me from my bed when I lived with my parents! Now one of my favourite additions to my own kitchen is my Lavazza Moda Mio Magia coffee machine – it produces perfect espressos and I just wanted to share some of my favourite coffee shots! 🧡
